This PR splits up 07-customization.md into a 07-customization/ directory and a new 08-components-reference/ directory. The sub-pages now display as nested sections within the Starlight sidebar, expanding automatically.

The fish-config.index has also been updated to ensure all quick-links resolve correctly to the newly structured pages.
